Classic Winter Chicken Soup
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 tsp dried thyme
- 1 bay leaf
- 6 cups chicken stock
- 2 cups cooked shredded chicken
- 1 cup pasta or noodles (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Method:
- Heat olive oil in a large pot. Add onion and garlic, sauté until soft.
- Add carrots and celery, cook for another 5 minutes.
- Stir in thyme, bay leaf, and chicken stock. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add chicken and pasta (if using), simmer for 10 more minutes until noodles are tender.
- Season with salt and pepper, garnish with fresh parsley, and serve warm.
